Not everyone has the advantage of having a Mexican grandmother like we did. That doesn’t mean you can’t cook excellent food like you will find in our restaurant.
Here are some tips.
Ingredients
Make sure you use fresh ingredients.
- Fresh Limes: We freshly squeeze plenty of lime juice on many of our dishes.
- Fresh Cilantro: Chop it just before you serve it.
- Home Cooked Beans: It takes longer to prepare but it is well worth it.
- Piloncillo: Instead of using refined sugar, this amazing sweetener is part of the secret our grandmothers passed down to us.
- Dry Roasting: Form many of our dishes, we don’t use oil when we pan-sear our garlic, onions, peppers, tomatoes, and other vegetables. We know it’s ready when all sides are slightly browned.
